- Add Aromatics and Spices: Stir in the minced garlic, ground cumin, and smoked paprika. Cook for about 30 seconds to let the spices bloom and release their flavors.
- Simmer Tomato Sauce: Pour in the crushed tomatoes, then season with salt and black pepper. Reduce heat and let the sauce simmer gently for 5-7 minutes until it thickens slightly.
- Toast Bread: While the sauce simmers, toast the slices of thick-cut bread in a toaster or a skillet until golden and crisp.
- Assemble Toast with Sauce: Spoon the tomato and pepper mixture generously over each slice of toasted bread. Using a spoon, make a small well in the center of the tomato sauce on each toast.
- Add Eggs: Crack one egg into each well created on the tomato-coated toast. Carefully transfer the toasts to a baking sheet.
