- 3 celery stalks, sliced
- 3 medium potatoes, peeled and cubed
- 1 cup frozen peas
Herbs and Broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons tomato paste
- 4 cups low-sodium chicken broth
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat and Sear the Chicken: Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the chicken chunks with salt and pepper, then add them to the pot. Sear the chicken for 5 to 6 minutes until nicely browned on all sides. Remove the chicken from the pot and set aside.
- Sauté Vegetables: In the same pot, add the diced onion, minced garlic, sliced carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables soften and become fragrant.
- Add Herbs and Tomato Paste: Stir in the dried thyme, dried rosemary, and tomato paste. Continue cooking for 1 minute to let the herbs release their aroma and the tomato paste deepen in flavor.
- Add Potatoes and Broth: Add the peeled and cubed potatoes to the pot along with the low-sodium chicken broth. Return the seared chicken chunks to the pot as well.
- Simmer the Stew: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30 to 35 minutes. Stir occasionally during this time until the chicken is tender and the potatoes are fully cooked through.
- Add Peas and Final Touches: Stir in the frozen peas and cook uncovered for an additional 3 minutes to heat through. Taste and adjust the seasoning with salt and pepper as needed. Just before serving, sprinkle chopped fresh parsley over the stew for a burst of fresh flavor.
