Instructions

  1. Prepare Chicken: Pound the chicken breasts to an even thickness to ensure they cook evenly. Season both sides of the chicken with salt, pepper, and garlic powder for a flavorful crust.
  2. Sear Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet, place on a plate, and cover loosely with foil to keep warm.
  3. Make Sauce: Reduce the heat to medium and add butter to the same skillet. Once melted, pour in the chicken broth while scraping up any browned bits from the bottom of the pan. Stir in the Boursin cheese and heavy cream, whisking continuously until the cheese melts and the sauce becomes smooth. Allow it to simmer gently for 2–3 minutes until it thickens slightly.
  4. Combine and Heat Through: Return the cooked chicken breasts to the skillet, spoon the creamy sauce over them, and let simmer for an additional 2 minutes to heat the chicken through and meld the flavors.
